Instructions
- Heat oil in medium-sized non-stick skillet over medium heat.
- In bowl, whisk egg, egg whites, grated zucchini, coconut flour, and Herbs de Provence. Season to taste with salt and pepper. Pour egg mixture into skillet, cover with lid, and cook gently until eggs are set.
- Serve immediately, topped with tomato sauce and Parmesan cheese.
