Quick Feta Couscous Salad

Ingredients
For the couscous:
6 oz (170 g) dry couscous

For the salad:
2 oz (55 g) red onion, finely chopped
5 oz (140 g) cherry tomatoes, halved
9 oz (255 g) cucumber, chopped
0.5 oz (15 g) fresh parsley, chopped
0.25 oz (7 g) fresh mint, chopped
1.5 oz (42 g) feta cheese, crumbled
2 oz (55 g) red onion, finely chopped
5 oz (140 g) cherry tomatoes, halved
9 oz (255 g) cucumber, chopped
0.5 oz (15 g) fresh parsley, chopped
0.25 oz (7 g) fresh mint, chopped
1.5 oz (42 g) feta cheese, crumbled

Instructions
- In medium saucepan, bring 8 oz (240 ml) water to a boil. Remove from heat, stir in couscous, and season with salt and pepper. Cover and let sit for 5 minutes.
- Uncover, fluff with fork, and let cool for 5 minutes.
- In small bowl or mason jar, whisk together lemon juice, 4 tablespoons olive oil, and garlic. Season with salt and pepper.
- In large bowl, combine couscous, red onion, cherry tomatoes, cucumber, parsley, mint, and feta. Mix well.
- Pour dressing over salad and toss to combine.
- Taste and adjust seasoning if needed.
