Lemon Rosemary Chicken

1 lb (450 g) chicken breast
3 tbsp lemon juice
1 tsp dried oregano
1 ½ tsp smoked paprika
2 tbsp garlic, minced
5 lemons slices, for garnish
3 fresh rosemary sprigs, for garnish

Instructions

  • In large plastic bag, combine chicken, 2 tablespoons olive oil, lemon juice, oregano, paprika, garlic, salt, and pepper. Seal and shake to coat evenly.
  • Marinate in refrigerator for at least 1 hour (up to 8 hours).
  • Preheat oven to 400°F (200°C). Transfer chicken to casserole dish.
  • Bake for 30 minutes, or until cooked through (meat thermometer reading 165°F/75°C).
  • Garnish with lemon slices dipped in rosemary.
