Harissa Sweet Potato Fritters

7.3 oz (205 g) sweet potatoes, peeled, coarsely grated
1 white onion, thinly sliced
2 tbsp harissa paste
1 oz (30 g) wheat flour
5 eggs
0.35 oz (10 g) fresh parsley, chopped

Instructions

  • Preheat oven to 130°C (265°F).
  • Heat 1 teaspoon olive oil in pan over medium heat. Fry onion until soft, about 10 minutes.
  • Combine sweet potatoes, cooked onions, harissa, flour, and 1 egg. Season with salt and pepper.
  • Shape mixture into patties (about 3 oz each). Heat 1 tablespoon olive oil in pan over medium heat. Fry until golden, about 5 to 6 minutes per side.
  • Boil saucepan of water. Reduce to a simmer, then add 1 tablespoon white wine vinegar and pinch of salt. Create a swirl in the water, gently crack in egg, and poach for 4 minutes. Remove with slotted spoon and drain on paper towel. Repeat with remaining eggs.
  • Plate fritters and top with poached eggs. Garnish with parsley.
