2 tbsp chia seeds
4 fl oz (120 ml) coconut milk
¼ tsp vanilla extract
1 mango, peeled, chopped
2 oz (60 g) coconut yogurt
1 serving Almond Quinoa Granola (see original recipe)

Instructions

  • Combine chia seeds, milk, and vanilla extract in container. Mix well and set for at least 20 to 60 minutes, stirring every so often to prevent clumps.
  • Blend mango into a smooth puree.
  • Layer chia pudding, yogurt, mango puree, and granola in bowls.
  • Serve immediately, or refrigerate until ready to eat.
