Quick & Easy Chickpea Curry

Ingredients

2 cloves garlic, peeled, chopped
1.4 oz (40 g) sun-dried tomatoes in oil, chopped
2 tsp curry powder
½ tsp chili powder
8 oz (230 g) canned chickpeas, including liquid
4 tbsp fresh cilantro, chopped
½ lime, juiced
1.4 oz (40 g) cucumber, finely diced
5.6 oz (160 g) soy yogurt
½ tsp dried mint

Instructions

  • Heat 1 tablespoon olive oil in skillet over medium heat. Sauté garlic and sun-dried tomatoes for 1 minute.
  • Add curry powder and chili powder and cook for 30 seconds.
  • Add chickpeas with liquid and 6.8 fl oz (200 ml) water. Simmer for 5 to 7 minutes. Stir in cilantro and season with salt.
  • Mix yogurt with lime juice, cucumber, dried mint, salt, and pepper to make raita.
  • Serve chickpea curry with raita.
