Balsamic Glazed Mushroom & Zucchini

Ingredients

1.25 lbs (570 g) zucchini, halved lengthwise, sliced into ¼ in half moons
2 shallots, thinly sliced
8 oz (225 g) white button mushrooms, washed, sliced
8 oz (225 g) shiitake mushrooms, stems removed, sliced
1 garlic clove, minced
1 tbsp fresh thyme leaves, divided

Instructions

  • Heat 1 tablespoon olive oil in large skillet over medium-high heat. Sauté zucchini and shallots until tender and browned, about 15 to 20 minutes. Season with salt and pepper. Remove from pan.
  • Add 1 tablespoon olive oil and mushrooms to skillet. Cook for 8 to 10 minutes until browned.
  • Stir in garlic, 1 tablespoon balsamic vinegar, and ½ tablespoon thyme. Cook for 1 minute.
  • Return zucchini to pan, mix well, and warm through. Garnish with remaining thyme and serve.
