1 avocado, halved, pitted, mashed
¼ lime, juiced
2 tbsp soy yogurt
¼ tsp chili flakes
2 tsp sesame seeds, roasted
1.4 oz (40 g) mixed salad greens

Instructions
- Combine flour, baking powder, and pinch of salt in bowl. Gradually whisk in soy milk and 1 tablespoon olive oil until smooth.
- Heat nonstick pan over medium heat. Drop batter to make palm-sized pancakes. Flip when bubbles form on surface and cook for 1 to 2 minutes. Keep warm by covering with aluminum foil.
- Mix mashed avocado with lime juice, soy yogurt, chili flakes, and roasted sesame seeds.
- Serve pancakes topped with avocado spread and mixed salad greens.
