Ingredients
7 oz (200 g) bananas
6.3 oz (180 g) cottage cheese
1 egg
2.7 fl oz (80 ml) maple syrup
1 tsp vanilla extract
1 tsp ground cinnamon
7 oz (200 g) oat flour
2 tsp baking powder
1 banana, sliced, for garnish
1 oz (30 g) walnuts, for garnish

Instructions
- Preheat oven to 350°F (180°C). Line 20 cm (8 inch) loaf pan with parchment paper or grease with oil.
- In large bowl, mash bananas until smooth. Add cottage cheese, egg, maple syrup, ground cinnamon, vanilla extract, and pinch of salt. Mix thoroughly until well combined.
- Gradually stir in oat flour and baking powder. Mix until a smooth batter forms.
- Adjust batter consistency if needed: add a little more flour if too runny or a splash of milk if too dry. This will depend on size of the bananas used.
- Pour batter into prepared loaf pan and spread evenly. Garnish with sliced banana and walnuts. Bake for approximately 30 minutes, or until a toothpick inserted into center comes out clean.
- Allow banana bread to cool in pan for 10 minutes, then transfer to a wire rack. Cool completely before slicing.
