Green Cilantro-Lime Chicken Salad

1 head lettuce, chopped
1 cucumber, sliced
1 avocado, sliced
0.3 oz (8 g) fresh cilantro, torn
1 lb (450 g) chicken breast

Instructions

  • Blend dressing ingredients with 4 tablespoons olive oil and pinch of salt in blender or small food processor until smooth and creamy. Refrigerate until ready to use.
  • Season chicken with salt and black pepper. Heat 1 tablespoon olive oil in pan and grill chicken for 4 minutes per side, or until cooked through. Slice into strips.
  • Combine lettuce, cucumber, avocado, and cilantro in large salad bowl. Divide between serving bowls and add grilled chicken on top.
  • Drizzle with cilantro yogurt dressing, toss, and serve.
