Broccoli Mac & Cheese

Ingredients
8 oz (225 g) elbow macaroni
11.9 oz (340 g) broccoli florets
2 tbsp butter
2 tbsp all-purpose flour
16 fl oz (475 ml) reduced-fat milk
1 tsp Dijon mustard
4 oz (120 g) cheddar cheese, shredded
4 oz (120 g) Gruyere cheese, shredded

Instructions
- Cook macaroni in salted boiling water until al dente. Steam broccoli in same pot for the last 1 to 2 minutes. Drain.
- In saucepan, melt butter over medium heat. Whisk in flour to make a roux and cook for 2 minutes.
- Gradually whisk in milk. Add Dijon mustard and season with salt and pepper. Simmer until thickened, about 5 to 7 minutes.
- Stir in cheeses until melted, then mix with macaroni and broccoli. Serve immediately.
