Instructions

  • Preheat oven to 400°F (200°C). Grease 8 x 11 inch (20 x 28 cm) baking dish with 1 tablespoon olive oil.
  • Place feta in center of dish. Crack eggs around feta, then drizzle with 1 tablespoon olive oil. Season with salt and black pepper.
  • Bake for 18 to 22 minutes, until feta melts and egg whites set.
  • Use a fork to scramble feta and eggs together. Serve garnished with fresh basil.
