14 oz (400 g) block extra firm tofu, drained
0.7 oz (20 g) nutritional yeast
½ tsp garlic powder
½ tsp onion powder
zest of 1 medium lemon
1 tbsp lemon juice, plus more to taste

Instructions
- Drain tofu and press gently to remove excess water.
- Crumble tofu into bowl of food processor.
- Add remaining ingredients with additional 1 heaped teaspoon salt, some black pepper, and 1 ½ tablespoon extra virgin olive oil, then blend mixture until it becomes creamy and smooth, pausing to scrape down sides of bowl as needed.
- Taste ricotta and adjust seasoning to taste by adding more lemon juice or salt.
