Instructions

  • Drain tofu and press gently to remove excess water.
  • Crumble tofu into bowl of food processor.
  • Add remaining ingredients with additional 1 heaped teaspoon salt, some black pepper, and 1 ½ tablespoon extra virgin olive oil, then blend mixture until it becomes creamy and smooth, pausing to scrape down sides of bowl as needed.
  • Taste ricotta and adjust seasoning to taste by adding more lemon juice or salt.
