Ingredients

2.6 oz (75 g) oat flour
2.6 oz (75 g) white rice flour
6 tbsp coconut sugar
1 tsp baking powder
pinch salt
¼ tsp ground cardamom
¼ tsp ground cinnamon
2 tbsp coconut oil, melted
4 tbsp oat milk

Instructions

  • Preheat oven to 360°F (180°C). Line baking tray with parchment paper.
  • Combine all ingredients in bowl and mix well to form cookie dough. Divide mixture to form 8 balls (about the size of small walnuts). Place balls on baking sheet and flatten with hands or by using bottom of glass bottle or container.
  • Place tray in oven and bake for 12 to 15 minutes until golden. Remove from oven and place cookies on wire rack to cool before serving.
