Silky Broccoli & Pea Soup

Ingredients

½ onion, peeled, diced
1 clove garlic, minced
1 broccoli, cut into florets, stems separated
11.8 fl oz (350 ml) vegetable stock
10 fl oz (300 ml) coconut water
7 oz (200 g) frozen green peas
1.4 oz (40 g) almond flour
1 oz (30 g) chia seeds, plus extra for garnish

Instructions

  • Heat 1 tablespoon olive oil in large pot over medium heat. Add diced onion and garlic, cooking for 5 minutes until translucent.
  • Add broccoli stems, vegetable stock, and coconut water to pot. Simmer for 8 to 10 minutes.
  • Stir in broccoli florets, green peas, almond flour, and chia seeds. Cook for an additional 5 minutes.
  • Blend soup until smooth using immersion blender. Season with salt and pepper to taste.
  • Garnish with chia seeds and serve hot.
