Smashed Edamame Toast

Ingredients

4 tbsp tahini
12 oz (340 g) frozen edamame, defrosted
½ medium ripe avocado
1 ½ tbsp tamari sauce
2 cloves garlic, roughly chopped
1 handful cilantro leaves
1 tsp sesame oil
1 lime, zested, juiced

Instructions

  • Place tahini, edamame, avocado, tamari, garlic, cilantro, sesame oil, lime juice, and zest into food processor. Blend to form chunky dip consistency. Season to taste with salt.
  • Toast bread slices and spread edamame mixture over each slice.
  • Sprinkle with hemp seeds and top with pickled onions to serve.
