Tofu Scramble on Avo Toast

Ingredients

1 lb (454 g) firm tofu
¼ tsp ground turmeric
½ tsp garlic powder
½ tsp onion powder
¼ tsp paprika
1 tbsp tahini
2 tbsp nutritional yeast
4 fl oz (120 ml) oat milk
4 sliced bread, toasted, to serve
1 avocado, mashed, to serve
chopped parsley, to serve

Instructions

  • Drain tofu for 15 minutes to remove excess water.
  • Add turmeric, garlic powder, onion powder, paprika, black pepper, tahini, and nutritional yeast to a bowl and gradually whisk in oat milk to form smooth sauce.
  • Crumble pressed tofu into medium chunks using hands.
  • Heat 1 tablespoon olive oil in large non-stick skillet over medium-high heat. Add tofu and sauté for 5 to 7 minutes, stirring occasionally, until lightly browned
  • Pour sauce over tofu and stir to coat evenly. Cook for another 1 to 2 minutes or until desired texture is achieved.
  • Season with salt and pepper. Serve warm over toasted bread and smashed avocado. Top with parsley.
