Poached Salmon with Cucumber Salad

Ingredients

2 lemons
2 cloves garlic, peeled
1 yellow onion, quartered
1.1 lbs (500 g) salmon filets
3.5 oz (100 g) Greek yogurt
1 cucumber, thinly sliced
4 green onions, sliced
0.7 oz (20 g) fresh dill, chopped

Instructions

  • Wash lemons. Juice one and slice the other.
  • Heat some water in pot. Add 2 tablespoons olive oil, garlic, onion quarters, lemon slices, and pinch of salt. Boil, then reduce to simmer for 6 minutes.
  • Season salmon filets with salt. Place them in pot and simmer (covered) for 5 to 6 minutes or until salmon is opaque and cooked through. Remove salmon and drain.
  • In mixing bowl, combine cucumber slices, yogurt, lemon juice, half green onions, and dill. Season with salt and pepper.
  • Serve poached salmon with cucumber salad. Garnish with remaining green onions.
