Loaded Taco Sweet Potatoes

Ingredients
4 medium sweet potatoes
1 lb (450 g) 95% lean ground beef
1 onion, diced
3 cloves garlic, minced
2 tbsp taco seasoning
4 oz (115 g) tomato sauce
4 fl oz (115 ml) beef stock

Instructions
- Preheat oven to 400°F (200°C). Line baking sheet with baking paper.
- Wash and dry sweet potatoes thoroughly. Pierce all over with fork, rub with 1 tablespoon olive oil, and place on baking sheet. Bake for 50 to 60 minutes or until tender and easily pierced with fork.
- Meanwhile, heat 1 tablespoon olive oil in skillet over medium-high heat. Add ground beef and cook until browned. Reduce heat to medium, add onion and garlic, and sauté until onions are translucent.
- Stir in taco seasoning and mix well. Add tomato sauce and stock, then season with salt and pepper.
- Reduce heat to low, cover, and simmer for 20 to 25 minutes, stirring occasionally.
- Place all salsa ingredients into bowl and season to taste with salt and pepper. Stir to combine.
- Once sweet potatoes are cooked, slice lengthwise and fill each with taco beef. Top with salsa and serve.
