Instructions
- Preheat oven to 375°F (190°C). Line baking dish with baking paper.
- Place chicken thighs in baking dish. Mix red curry paste with water and pour over chicken, ensuring it is evenly coated.
- Bake chicken for 25 minutes or until fully cooked and juices run clear.
- While chicken bakes, steam broccoli for 3 to 5 minutes until bright green and tender.
- Serve chicken with steamed broccoli and garnish with cilantro.
