2 oz (60 ml) water
1.2 lbs (540 g) broccoli florets

Instructions

  • Preheat oven to 375°F (190°C). Line baking dish with baking paper.
  • Place chicken thighs in baking dish. Mix red curry paste with water and pour over chicken, ensuring it is evenly coated.
  • Bake chicken for 25 minutes or until fully cooked and juices run clear.
  • While chicken bakes, steam broccoli for 3 to 5 minutes until bright green and tender.
  • Serve chicken with steamed broccoli and garnish with cilantro.
