Smoky Tomato & Bean Stew

Ingredients

3 cups (480 g) rice
2 cloves garlic, minced
½ cup (55 g) sundried tomatoes, drained
1 tsp smoked paprika
salt and pepper, to taste
14 oz (400 g) can cannellini beans, drained
14 oz (400 g) can chopped tomatoes
1 tbsp maple syrup
4 handfuls lambs lettuce, or greens of choice
4 tbsp natural soy yogurt
black pepper

Instructions

  • Cook rice according to package instructions.
  • Heat large pot over medium-high heat. Sauté sundried tomatoes and garlic for 2 to 3 minutes. Add smoked paprika and season to taste with salt and pepper. Mix well to combine. If necessary, add splash of water to prevent tomatoes from burning.
  • Add drained cannellini beans, chopped tomatoes, and maple syrup. Simmer for 10 minutes.
  • To serve, divide rice, lettuce, and bean stew between 4 plates and top each with 1 tablespoon yogurt. Finish with black pepper and serve immediately.
