Pumpkin & Red Lentil Soup

1 yellow onion, finely sliced
2.2 lbs (1 kg) pumpkin, peeled, cubed
4.8 oz (135 g) red lentils, washed, drained
2.1 pt (1 ltr) vegetable stock
1 tbsp fresh ginger, finely grated

Instructions

  • Heat 1 tablespoon olive oil in soup pot over medium heat. Add onion and sauté for 3 to 5 minutes until softened.
  • Add pumpkin, lentils, stock, and ginger. Stir, then bring to a simmer. Cook for 15 minutes until pumpkin and lentils are soft.
  • Season with 1 teaspoon sea salt. Blend until smooth and serve warm.
