Sweet Potato & Black Bean Quesadillas

Ingredients
4 oz (115 g) plant-based cheddar cheese, shredded
10.5 oz (300 g) sweet potato, cooked, mashed
10.5 oz (300 g) canned black beans, drained
8 whole wheat tortillas
8 tbsp plant-based Greek yogurt, to serve
1 avocado, sliced, to serve
8 tbsp salsa, to serve

Instructions
- In medium bowl, mix shredded cheese, mashed sweet potato, and black beans.
- Heat large non-stick skillet over medium heat. Place one tortilla in pan, warming for 20 to 30 seconds on each side until soft.
- Spread half cheese mixture over tortilla, then top with second tortilla.
- Press gently and cook until bottom is golden (about 1 to 2 minutes). Flip over and cook for 2 to 3 minutes until cheese has melted.
- Repeat process with remaining tortillas and filling.
- Slice and serve with yogurt, avocado, and salsa.
