Zesty Turkish Couscous Salad

Ingredients
3.5 oz (100 g) couscous
1 oz (30 g) tomato paste
0.5 oz (15 g) fresh parsley, chopped
3 green onions, finely sliced
1 lemon, ½ juiced, ½ cut into wedges for serving
¼ cucumber, finely diced
1 fl oz (30 ml) pomegranate juice
1.8 oz (50 g) tomatoes, deseeded, finely diced
½ tsp ground cumin

Instructions
- Soak couscous in 3.4 fl oz (100 ml) hot water for 20 minutes. While couscous is soaking, prepare vegetables.
- Combine couscous with remaining ingredients. Drizzle with 2 tablespoons olive oil and season with salt. Mix well and serve with lemon wedges.
