White Bean & Tomato Stew

Ingredients

2 yellow onions, halved, sliced
7 oz (200 g) can chopped tomatoes, diced
4 cloves garlic, peeled, grated
3 tbsp parsley, finely chopped, plus extra to garnish
2 tsp sweet paprika
1 tsp ground ginger
1 tsp ground turmeric
1 pt (480 ml) vegetable stock
1.6 lb (720 g) canned cannellini beans, drained

Instructions

  • Place large pot over medium-low heat and warm 2 tablespoons olive oil. Add onions, cover pot, and sauté, stirring occasionally for 7 minutes until soft.
  • Add diced tomatoes, garlic, parsley, paprika, ginger, turmeric, and 1 ½ teaspoon salt. Add vegetable stock, cover, and cook for 45 minutes.
  • Add drained beans and cook for 20 minutes.
  • Adjust seasoning to taste. Serve with more chopped parsley or parsley oil.
