Super Green Soup

Ingredients

1 tbsp extra virgin olive oil
2 cloves garlic, minced
2 tsp ground cumin
salt and pepper, to taste
2 ½ cups (600 ml) vegetable broth (stock)
1 head broccoli, cut into florets
7 oz (200 g) spinach
14 oz (400 g) can cannellini beans, drained
4 tbsp fresh cilantro (coriander), chopped
½ lemon, juiced
5 tbsp oat cream, to serve

Instructions

  • Heat olive oil in large pot over medium heat. Add garlic and cumin to pot, season with salt and pepper, and cook for 1 to 2 minutes. Add in vegetable broth and broccoli, bringing to a boil. Reduce heat and simmer gently for 10 minutes.
  • Add remaining ingredients (excluding oat cream) and cook for 10 minutes. Once soup has cooked, use hand blender to blend until smooth and creamy.
  • Divide soup into 4 bowls. Top each bowl with 1 tablespoon oat cream and serve.
