Ingredients

5.6 oz (160 g) chicken breast, minced
2 cloves garlic, minced
5.6 oz (160 g) canned diced tomatoes
2 tsp oregano
2 sprigs thyme, leaves removed
1 tsp chili powder
2 zucchinis, sliced into ribbons
4.2 oz (120 g) ricotta cheese
2.3 oz (65 g) mozzarella cheese, grated

Instructions

  • Preheat oven to 390°F (200°C).
  • Heat 1 tablespoon olive oil in skillet. Add chicken and garlic. Then season with salt and pepper and sauté for 4 to 5 minutes.
  • Add canned tomatoes, oregano, thyme, and chili powder to skillet and simmer for 10 minutes.
  • In casserole, layer zucchini ribbons with ricotta, chicken, and tomato sauce.
  • Top with mozzarella cheese and place into hot oven, baking for 25 minutes.
