1 leek, sliced
1.4 pt (665 ml) vegetable stock
3.5 oz (100 g) reduced-fat cream cheese
½ tsp paprika powder

Instructions

  • Heat 1 tablespoon olive oil in large pot and cook ground beef until browned.
  • Add sliced leek and sauté briefly, then pour in vegetable stock. Simmer for 5 minutes.
  • Stir in cream cheese and season with paprika, salt, and pepper. Cook for 5 minutes until soup has thickened. Serve hot.
