Mushroom & Herb Pancakes

Ingredients
3.5 oz (100 g) cremini mushrooms, diced
1 yellow onion, diced
3.5 oz (100 g) 4% fat cottage cheese
2 eggs
1.4 oz (40 g) ground almonds
1 tsp baking powder
3.5 oz (100 g) tomatoes, diced
1 green onion, sliced
4 tbsp 2% fat Greek yogurt

Instructions
- Heat 1 tablespoon olive oil in non-stick skillet over medium heat. Sauté mushrooms and yellow onion for 5 minutes.
- In bowl, combine cottage cheese, eggs, ground almonds, baking powder, and pinch of salt. Fold in sautéed mushrooms, tomatoes, and green onions.
- Heat another tablespoon olive oil in skillet. Spoon batter into pan to form pancakes and cook for 3 minutes on each side until golden.
- Serve warm topped with Greek yogurt (optional).
