Rustic Flaxseed Spelt Buns

Ingredients

11 fl oz (330 ml) water, plus extra for brushing
1.4 oz (40 g) fresh yeast
1 tsp coconut sugar
1.1 lbs (500 g) spelt flour
3.5 oz (100 g) ground flaxseed
2 tsp sea salt
0.7 oz (20 g) fine oats

Instructions

  • Heat water until lukewarm, then add yeast and sugar. Stir until dissolved.
  • In large bowl, mix flour, flaxseed, and salt. Form a well in middle and pour in yeast mixture. Mix using hands to form a dough.
  • Cover dough with a cloth and let rest for 30 minutes until doubled in size.
  • Preheat oven to 400°F (200°C). Line baking sheet with parchment paper.
  • Divide dough into 12 even-sized balls. Brush buns with water and press gently into oats.
  • Place buns on baking sheet and make a cross-shaped slash on top of each bun.
  • Bake in hot oven for 30 minutes until golden and firm.
  • Set aside on wire rack to cool before serving.
