Ingredients
7 oz (200 g) all-purpose flour
1.8 oz (50 g) almond meal
3.5 oz (100 g) coconut sugar
1 tsp baking powder
pinch of salt
9 oz (255 g) carrots, peeled, chopped
4 fl oz (120 ml) orange juice
1 tbsp orange zest
2.7 fl oz (80 ml) unsweetened almond milk
3 tbsp olive oil
0.4 oz (10 g) powdered sugar, for dusting

Instructions
- Preheat oven to 340°F (170°C). Line standard round cake pan with parchment paper.
- In a bowl, mix flour, almond meal, coconut sugar, baking powder, and salt.
- Add carrots, orange juice, orange zest, almond milk, and olive oil to food processor, blending until smooth.
- Combine wet mixture with dry ingredients and mix until smooth. Pour into prepared cake pan.
- Bake in hot oven for 30 minutes or until a toothpick comes out clean.
- Remove from oven and set aside on a wire rack to cool. Dust with powdered sugar, then slice and serve.
