Ingredients
2 bananas, sliced
1 lb (450 g) cottage cheese
3 tbsp peanut butter, divided
2 tbsp honey
1 tsp vanilla extract
3 tbsp chocolate chips, melted
3 tbsp granola
2 tbsp peanuts, chopped
flaky sea salt (optional)

Instructions
- Line a rimmed baking sheet with parchment paper or silicone liner. Arrange banana slices in a rectangle (approximately 35 slices in 5 x 7 layout).
- Place cottage cheese, 2 tablespoons peanut butter, honey, and vanilla extract into a blender or food processor, blending until smooth.
- Pour mixture over bananas and spread into an even layer. Drizzle remaining tablespoon of peanut butter on top.
- Melt chocolate chips in microwave, stirring every 30 seconds until smooth (about 60 to 90 seconds total). Drizzle chocolate in a zigzag pattern over bark.
- Sprinkle over granola, chopped peanuts, and small pinch of flaky sea salt (optional).
- Place into freezer for at least 2 hours or until fully frozen. Break bark into pieces by hand or cut into chunks with a knife.
