Garlicky Shrimp & Broccoli Stir Fry

Ingredients
6 cloves garlic, sliced, divided
1 head broccoli, cut into small florets
½ red bell pepper, diced
1 lb (450 g) raw shrimp, peeled, deveined
2 tsp lemon juice, plus extra to taste
salt and pepper, to taste

Instructions
- Heat 1 tablespoon olive oil in large pot over medium heat. Add half the sliced garlic and cook for 1 minute.
- Add broccoli, red bell pepper, and ¼ teaspoon each of salt and pepper. Cover and cook, stirring occasionally. If pot becomes dry, add 1 tablespoon of water. Cook for 3 to 5 minutes until vegetables are tender. Transfer vegetables to a bowl and keep warm.
- Increase heat to medium-high and add 1 tablespoon of olive oil to pot. Add remaining garlic and cook for 1 minute.
- Add shrimp and ¼ teaspoon each of salt and pepper. Cook for 3 to 5 minutes, stirring frequently, until shrimp are just cooked through.
- Return broccoli mixture to pot and stir in lemon juice. Taste and adjust seasoning with additional salt, pepper, or lemon juice if needed. Serve immediately.
