Lemon & Herb Salmon Pasta

Ingredients

7 oz (200 g) pasta shells
2 tbsp fresh parsley, chopped
2 tbsp fresh basil, chopped
2 tbsp fresh chives, chopped
2 tbsp fresh dill, chopped
3.5 oz (100 g) Greek yogurt
juice of 2 lemons
2.1 oz (60 g) baby spinach
4.2 oz (120 g) hot-smoked salmon, broken into large pieces
salt and pepper, to taste

Instructions

  • Cook pasta according to package instructions until al dente. Drain and set aside.
  • Place fresh herbs into a small bowl along with Greek yogurt and lemon juice. Season with salt and black pepper to taste.
  • Toss cooked pasta with herby yogurt mixture until evenly coated. Gently fold in baby spinach. Adjust seasoning with additional salt and pepper if needed.
  • Serve pasta lukewarm topped with pieces of hot-smoked salmon.
