Matcha Coconut Granola

Ingredients
5.3 oz (150 g) gluten-free rolled oats
4.4 oz (125 g) unsweetened flaked coconut
2 oz (55 g) pumpkin seeds
2 oz (55 g) sliced almonds
3 tbsp coconut oil, melted
2.7 fl oz (80 ml) maple syrup
1 tsp vanilla extract
2 tsp matcha powder
¼ tsp salt

Instructions
- Preheat oven to 300°F (150°C).
- In a large bowl, combine rolled oats, flaked coconut, pumpkin seeds, and sliced almonds.
- In a separate bowl, combine coconut oil, maple syrup, vanilla extract, and ¼ teaspoon of salt. Pour over oat mixture and toss to coat completely.
- Spread mixture onto a large baking sheet and bake for 1 hour, stirring once halfway through to ensure an even cook.
- Remove from oven and set baking sheet on a wire rack to cool for 15 minutes.
- Transfer granola to a large bowl, sprinkle matcha over top, and toss to combine.
