Creamy Pesto Kale Pasta

2 red onions, thinly sliced
10.6 oz (300 g) kale
10.6 oz (300 g) pasta of choice
4 tbsp plant-based cream cheese
4 tbsp fresh plant-based pesto
salt & black pepper, to taste

Instructions
- Heat 1 tablespoon of olive oil in a large pot over medium heat. Add onions and sauté for 10 minutes until softened and beginning to caramelize.
- Add kale and 3.4 fl oz (100 ml) water. Cover and cook for 5 minutes until kale has wilted.
- Cook pasta following package instructions. Drain and reserve a little cooking water.
- Toss pasta with onions, adding the cream cheese and pesto. If needed, add some reserved cooking water to loosen. Season with salt and pepper and serve.
