Blueberry Compote with PB Cream

4 tbsp blueberry, frozen
1 lemon, juiced
1 tsp vanilla extract
3 bananas
1 tsp ground cardamom
12 tbsp natural soy yogurt
6 tbsp peanut butter
pinch of salt

Instructions
- Mix blueberries with the lemon juice and vanilla extract in a small blender or food processor. Place in a bowl and set aside.
- Add bananas, cardamom, yogurt, peanut butter, and a pinch of salt to a small blender and mix together.
- Divide cream between 3 glasses or jars and top with blueberry compote. Swirl a little with a spoon so mixture comes together.
