Chickpea & Avocado Toast

Ingredients

1 cup (165 g) chickpeas, drained
1 tbsp extra virgin olive oil
¼ tsp salt
¼ tsp black pepper
1 tsp ground cumin
1 avocado
1 tbsp tahini
½ lemon, juiced
2 slices of bread, toasted
2 tbsp fresh parsley, chopped, to garnish

Instructions

  • Preheat oven to 390°F (200°C). Place chickpeas in ovenproof dish, drizzle with olive oil, and season with salt, pepper, and cumin. Mix well to combine.
  • Place dish in oven and cook chickpeas for 15 to 20 minutes, until crispy. Remove from oven and set aside.
  • In bowl, place avocado flesh and add lemon juice and tahini. Season to taste with more salt and pepper. Mash with fork.
  • Toast bread, divide mashed avocado between 2 slices of toast, and top with roasted chickpeas. Garnish with chopped parsley and serve.
