Air-Fried Tofu Breakfast Burrito

Ingredients

14 oz (400 g) firm tofu, cubed
2 tbsp cornstarch
1 onion, diced
2 garlic cloves, minced
2 tbsp tomato paste
1 tsp ground cumin
1 tsp ground coriander
1 tsp paprika powder
½ tsp chili powder
4 fl oz (120 ml) vegetable stock
½ tsp salt

Instructions

  • Preheat air fryer to 390°F (200°C).
  • Combine tofu cubes with cornstarch, 2 tablespoons of olive oil, and ½ teaspoon of salt. Bake in air fryer for 20 minutes.
  • Sauté garlic and onion in a skillet for 5 minutes until fragrant. Add tomato paste and dry spices and cook for a further 30 seconds.
  • Add vegetable stock and deglaze skillet, reducing stock until sauce thickens. Add fried tofu and coat each piece in sauce.
  • Place tofu in wraps and top with cilantro and onion.
