No-Bake Vanilla Protein Bars

Ingredients
2.1 oz (60 g) vanilla protein powder
4.2 oz (120 g) oat flour
4.4 oz (125 g) creamy peanut butter
2 fl oz (60 ml) honey or maple syrup
1 tbsp melted coconut oil
1 tsp vanilla extract
2 tbsp chocolate chips, plus 2 tbsp extra to top
salt, to taste

Instructions
- Line a 9 x 5 in (20 x 13 cm) loaf pan with parchment paper.
- Combine protein powder, oat flour, and ¼ teaspoon of salt. Add peanut butter, honey, vanilla, and coconut oil.
- Bring dough together with your hands; if it’s still too dry, add more melted coconut oil or water (1 teaspoon at a time) to achieve right consistency.
- Mix through chocolate chips.
- Press dough into lined loaf pan and add more chocolate chips on top, pressing in firmly.
- Place pan into refrigerator for 1 hour to chill (or freeze for 30 minutes).
- Remove from pan and cut into 6 even-sized bars.
