Zesty Cajun Chicken

Ingredients
1.3 lbs (600 g) boneless, skinless chicken thighs
1 tbsp Cajun seasoning
1 tsp smoked paprika
1 tsp onion granules
1 tsp garlic granules
1 tsp oregano
For the Cajun lime sauce:
1 shallot, finely chopped
3 cloves garlic, crushed
1 red bell pepper, finely chopped
1 tsp smoked paprika
1 tsp Cajun seasoning
6.8 fl oz (200 ml) chicken stock
5 fl oz (150 ml) Oatly cream
3.5 oz (150 g) cherry tomatoes
1 lime, cut in half
1 shallot, finely chopped

Instructions
- Drizzle chicken thighs with ½ tablespoon of olive oil and season with spices, salt, and pepper.
- Heat ½ tablespoon olive oil in a large, deep pan skillet over high heat. Sear the chicken thighs for 3 to 4 minutes on each side, then remove from the skillet and set aside.
- In the same skillet, sauté the shallot, garlic, and pepper over medium-low heat for 5 minutes, stirring regularly until soft. Add spices, chicken stock, and cream; stir to combine; and bring pan to a simmer.
- Add chicken thighs, cherry tomatoes, and lime back to pan. Cover pan and leave to cook over a medium heat for 15 to 20 minutes, until cooked through, stirring occasionally.
