The Best Almond Cookies

4.2 oz (120 g) almond meal
5.6 oz (160 g) white rice flour
½ tsp baking powder
2.7 fl oz (80 ml) maple syrup
3 tbsp coconut oil, melted
1 tsp almond extract
24 almonds
salt, to taste

Instructions
- Preheat the oven to 350°F (180°C). Line a baking sheet with baking paper.
- In a large bowl, combine the almond meal, rice flour, baking powder, and a pinch of salt. Add in the maple syrup and coconut oil and stir to form a cookie dough.
- Shape the dough into 8 even-sized balls and place them on the baking sheet. Press down each ball to form a cookie shape. Press 3 almonds on top of each cookie and bake in the oven for 12 to 14 minutes until golden.
- Once ready, remove from the oven and set on a wire rack to cool completely before enjoying.
