Ingredients

1 banana, ripe
4.2 oz (120 g) wholemeal flour
1.2 oz (35 g) almonds, chopped
1 ½ tsp baking powder
½ tsp ground cinnamon
2 tbsp coconut oil, melted
2 tbsp almond milk, unsweetened
1 tbsp maple syrup
salt, to taste

Instructions

  • Preheat the oven to 390°F (200°C). Line a baking sheet with baking paper.
  • Place the banana in a bowl and mash with a fork. Add the flour, chopped almonds, baking powder, cinnamon, and a pinch of salt. Mix well to combine.
  • Add the remaining ingredients and use your hands to form the mixture into a large ball of dough. Place the dough onto the lined baking sheet and flatten out until around 1 in (2.5 cm) thick. Using a knife cut the dough into 4 even-sized pieces and separate them.
  • Place the baking sheet into the hot oven and bake for 15 minutes. Remove the scones from the oven and set aside on a wire rack to cool before serving.
