One Pot Parmesan Chicken

Ingredients
1.1 lbs (500 g) chicken breast, cut in half
½ tsp garlic powder
2 tbsp butter
2 cloves garlic
pinch red pepper flakes
7 oz (200 g) basmati rice
1.3 pt (720 ml) chicken broth
1.6 oz (45 g) Parmesan cheese, grated
4 tbsp parsley, chopped
salt and pepper, to taste

Instructions
- Season the chicken with salt, pepper, and garlic powder.
- Heat 2 tablespoon olive oil in a large non-stick skillet and fry the chicken for 8 minutes until golden on both sides. Remove the chicken from the skillet and set aside.
- Using the same skillet, melt the butter, add the garlic and red pepper flakes, and cook for 1 to 2 minutes. Then add the rice and chicken broth. Stir to combine, then bring to a boil. Cover with a lid and cook over medium heat for around 10 minutes.
- Remove the lid and stir the rice, then top with the Parmesan cheese. Arrange the chicken filets on top and cook over low heat for 5 minutes. Garnish with freshly chopped parsley and serve.
