Ingredients

6 oz (170 g) dry quinoa
1 pt (475 ml) vegetable broth
6.3 oz (180 g) frozen mixed vegetables
½ tsp ground turmeric
½ tsp garlic powder
1 tsp paprika
sea salt & black pepper, to taste

Instructions

  • Add the quinoa, vegetable broth, and salt to a pot and bring to a boil. Reduce the heat and simmer gently for 8 to 10 minutes.
  • Stir in the vegetables, turmeric, garlic powder, and paprika. Simmer for a further 3 to 5 minutes, or until the broth is absorbed.
  • Season to taste with a little more salt and black pepper. Divide the pilaf equally between 2 bowls and serve.
