Curried Breakfast Oats

8 fl oz (240 ml) water
1.4 oz (40 g) rolled oats
½ tsp curry powder
2.8 oz (80 g) edamame beans
sea salt & black pepper, to taste

Instructions

  • Bring water to a boil in a small pot, adding in the rolled oats and curry powder. Reduce to a steady simmer and cook, stirring occasionally, for about 5 minutes, or until the oats are tender and most of the water has been absorbed.
  • Add the edamame to the pot, cover with a lid, remove it from the heat, and set aside to steam for 5 minutes. Remove the lid and stir everything until well combined.
  • Place the oats in a bowl. Add 1 tablespoon of olive oil and season to taste with salt and pepper.
