Ingredients

1 tbsp extra virgin olive oil
4.4 lbs (2 kg) pork shoulder, boneless, cut into pieces
1 white onion, chopped
4 tbsp red curry paste
14 oz (400 ml) can coconut milk
2 tsp fish sauce
1.3 lbs (600 g) butternut squash, cut into pieces
5.2 oz (150 g) green beans, halved
fresh cilantro (coriander), to garnish
lime wedges, to garnish

Instructions

  • Heat olive oil in large skillet over medium heat. Add diced pork and cook for 5 minutes, until meat has browned.
  • Place pork, onion, red curry paste, coconut milk, fish sauce, and butternut squash into slow cooker. Cover with lid and cook on low for 6 hours or on high for 4 hours. Add green beans to pot during final 30 minutes of cooking.
  • Serve pork alongside rice (optional) and garnished with cilantro and lime wedges.
