Protein Peanut Butter Cups

Ingredients

3 oz (85 g) dark chocolate chips
2 tsp coconut oil
1 tbsp almond milk
4.4 oz (125 g) natural peanut butter
1 oz (30 g) vanilla protein powder
½ tsp vanilla extract

Instructions

  • Place the coconut oil and chocolate chips in a small pot and melt over low heat. Remove from the heat before the chocolate chips have fully melted.
  • Mix the almond milk, peanut butter, protein powder, and vanilla extract. Press the peanut butter mixture into mini silicone muffin molds. Make sure to press down hard so that the mixture sticks together.
  • Pour the melted chocolate over the top, dividing the chocolate equally between each peanut butter cup. Place into the freezer to set.
