Baked Chicken with Lemon-Chive Sauce

For the chicken:
10.6 oz (300 g) boneless, skinless chicken breasts
1 egg
2 tbsp olive oil
1 tbsp paprika
1 tbsp garlic powder

For the sauce:
2 tbsp chives, chopped
3.5 oz (100 g) Greek yogurt
½ lemon, juiced, zested

Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with baking paper.
- Cut the chicken breasts into bite-sized strips.
- Crack the egg into a bowl and whisk together with 1 tablespoon of the olive oil, salt, pepper, paprika, and garlic powder.
- First cover the chicken in flour, then place in the egg and spice mixture. Finally, coat in breadcrumbs.
- Place the chicken onto the baking sheet and drizzle over the remaining tablespoon of olive oil. Place the baking sheet into the oven and bake for 7 minutes.
- Remove from the oven and flip the chicken pieces over. Bake for a further 10 minutes until the chicken is golden and cooked through.
- Meanwhile, place the chives, Greek yogurt, lemon juice, and ½ of the lemon zest into a bowl. Season with salt and pepper and whisk to combine.
- Serve the chicken immediately with the lemon-chive dipping sauce.
