Green Eggs & Ham Tortilla

2 eggs
1 green onion, sliced
handful spinach, chopped
1.9 oz (55 g) cottage cheese
1 whole wheat tortilla
2.1 oz (60 g) sliced ham
salt & black pepper, to taste

Instructions
- In a bowl, whisk together the eggs, onion, spinach, and cottage cheese. Season with salt and pepper.
- Preheat a non-stick skillet over medium-high heat. Add the egg mixture to the skillet and top with the tortilla. Cook for 3 to 4 minutes, or until the eggs are cooked to your preference.
- Using a plate to cover the skillet, flip the skillet upside down so the tortilla goes onto the plate. Slide the tortilla back into the pan with the eggs facing up.
- Top the eggs with the ham and fold the tortilla in two. Slice the tortilla in half and serve immediately.
